Dr. Catherine Stanton is principal research officer at the Teagasc Moorepark Food Research Centre, and her specialist area is Functional Foods and Nutrition, particularly in dairy, including bioactives, including studies on CLA, developments in probiotic dairy foods and proteolysis of (milk) proteins and bioactive peptide studies. She is investigator or co-investigator on research grants totaling ~ €5 million, EU Coordinator of EU Fifth Framework project QLRT-2001-02362 ‘Production of CLA Enriched Dairy Products by Natural Means’ BIOCLA (2003-2006), and author of over 80 peer-reviewed papers and co-inventor on a number of patents. She is a member of several scientific societies, advisory boards, and has been on the Joint FAO/WHO Expert Consultation and Working Group on probiotics. Activities within the Biotechnology Department include research on antimicrobial, anti-hypertensive peptides, anticancer and immunostimulatory components in foods, particularly those of milk origin, and phage therapy.
