Prof. Dr. med. vet. Dr.h.c. Johann BauerJohann Bauer (Prof. Dr. med. vet., Dr. h.c.) is a veterinary specialist for microbiology as well as for animal hygiene and animal husbandry. Since 1990 he holds the chair of animal hygiene at the Technical University of Munich/Weihenstephan, Germany. His main interest is the analysis of bacteria in complex matrices by cultural and gene-based-methods. He has also great experience in the detection of fungi and fungal compounds in food, feed and environmental samples and their importance for human and animal health.
Professor Bauer is Vice Dean of Academic Affairs at the Center of Life and Food Sciences at the Technical University Munich and is the director of the Central Institute for Agricultural Sciences - Hans Eisenmann-Zentrum. Furthermore, he is an active editorial board member such as Archives of Animal Nutrition or Journal of Animal Physiology and Animal Nutrition. In addition he is deputy editor of Mycoses.

M. Sc. Julia Matthes

ulia Matthes is a nutritional scientist with specialization on analytics and molecular biology. During the research for her Master`s Thesis and PhD, she focused on the analytical detection of mycotoxins in food and feed by HPLC-MS/MS. Now she concentrates her studies on the investigation of bacterial communities by PCR and single strand conformation polymorphism (SSCP).

Dr. rer. nat. Melanie Mayer

Melanie Mayer (Dr. rer. nat.) is a nutrition and food scientist with specialization on microbiology and molecular biology. She was working on an industrial project concerning the screening of ACE inhibition bacteria in fermented milks. During her PhD she became a specialist for the study of bacterial communities by real-time-PCR and single strand conformation polymorphism (SSCP).
